Zucchini Bread
Ingredients
- Zucchini - 2 c, shredded (raw)
- Eggs - 3
- Vanilla Extract - 1 Tbs
- Canola Oil - 1 c
- Flour - 3 c
- Sugar - 2 c
- Salt - 1 tsp.
- Baking Soda - 1 tsp.
- Baking Powder - 1 tsp.
- Cinnamon - 3 tsp.
Instructions
Mix zucchini, eggs, vanilla and canola oil in large bowl. In separate bowl mix flour, sugar, salt, baking soda, baking powder and cinnamon until well blended. Add dry ingredients to wet ingredients a little at a time. Pour into 2, 8 inch round, greased and floured pans. Preheat oven to 375°. Bake 375° for 45 minutes. After first 10 minutes top with walnut halves as a garnish, then continue baking until golden brown.
