Irish Soda Bread
Ingredients
- Flour - 3-1/2 c
- Sugar - 2/3 c
- Salt - 1 tsp.
- Baking Powder - 1 Tbs
- Baking Soda - 1 Tbs
- Raisins - 1 c
- Caraway Seeds - 1 Tbs
- Eggs - 2
- Buttermilk - 1-3/4 c
- Butter - 2 Tbs, melted
Instructions
In large bowl, mix flour, sugar, salt, baking powder, baking soda together; then add raisins and caraway seeds and toss until well coated. In separate bowl beat eggs, melted butter and buttermilk together; then add the flour mixture to egg mixture; mix until moist only, do not over mix. Grease and flour a loaf pan. Bake at 375° for one hour.
