Shrimp in Brown Wine Sauce
Ingredients
- Jumbo Shrimp - 3 lb.
- Flour - 2 c
- Eggs - 6
- Bread Crumbs - 2 c
- Butter - 1 lb. melted
- Marsala Wine - 3/4 c
- Mozzarella Cheese - sliced or shredded
- Mushrooms - 10 oz., sliced
Instructions
Peel, devein and butterfly shrimp. Set 3 bowls on counter. Place flour in a bowl. Place bread crumbs in a separate bowl. Beat eggs in a separate bowl, with whisk. First, dip shrimp into flour to coat; then dip floured shrimp into beatened egg; then dip shrimp into bread crumbs by pressing down on shrimp, be sure entire shrimp is coated with bread crumbs. Deep fry breaded shrimp until golden brown. Layer shrimp on large roasting pan, single layer. Melt butter in medium size pot, on very low heat, add Marsala wine and whisk together, then add slice mushrooms and mix. Remove from stove. Pour over shrimp in roasting pan. Top each shrimp with a slice of mozzarella or a handful of shredded mozzarella. Bake in a 350° oven until cheese is melted, about 15-20 minutes.
