Cucumber and Dill Mayonnaise
Ingredients
- Egg Yolks - 2 large
- Dijon Mustard - 2 Tbs
- Scallions - 1/2 c chopped
- White Wine Vinegar - 2 Tbs
- Salt - to taste
- Pepper - to taste
- Olive Oil - 1 c
- Cucumber - 1/2 peeled, seeded and cut into small cubes
- Fresh Dill - 2 Tbs chopped
Instructions
Combine egg yolks, mustard, scallions, vinegar and salt and pepper in a mixing bowl. Gradually pour in the olive oil in a thin stream, while whisking vigorously. When the mixture is smooth and thick, fold in the cucumber and dill and blend well.
