Chinese Almond Cake Cookies
Ingredients
- Almond Extract - 1 tsp.
- Presto Cake Flour - 4 cups sifted
- Salt - 1 tsp.
- Imperial Margarine - 1 cup
- Butter - 1 cup
- Sugar - 1-1/2 cup
- Almond Slivers
Instructions
Blend almond extract with margarine and butter, creaming until soft and smooth. Then mix sugar into mixture. Blend well. In separate bowl mix together cake flour and salt. Gradually work in together with butter mixture. Knead to a paste. Form dough into a long thick roll, about 2 or 2.5 inches in diameter. Cut in 1/2 inch slices. Arrange on a cookie sheet. Place an almond sliver on top of each sliced cookie. Bake at 300° about 30 minutes.
