Chicken Rollatini
Ingredients
- Seasoned Bread Crumbs - 2 cups
- Flour - 1/4 cup
- Parmesan Cheese - 2 Tbs., grated
- Salt - to taste
- Black Pepper - to taste
- Thyme - dash
- Eggs - 2-4, beaten
- Mozzarella Cheese - 12 oz., shredded
- Butter - 1 stick
- White Wine - 1/2 cup
- Chicken Cutlets - 6-8
Instructions
Mix in medium size bowl, seasoned bread crumbs, flour, grated Parmesan cheese, salt, pepper and thyme. In a separate bowl beat 2-4 eggs. Trim and pound each chicken cutlet until thin, cut in half lengthwise. Place a spoonful of shredded mozzarella on each cutlet, roll up and dip in egg and then in bread crumbs. Place in pan with seam side down. Melt one stick of butter and pour over cutlets. Bake for 15 minutes at 350°. Then pour the white wine over cutlets and bake another 25 minutes. All ingredients are approximate. You may need more bread crumb mixture to cover all chicken cutlets or more butter if it looks too dry when you add to cutlets.
