Pork Piccata
Ingredients
- Pork Shoulder - 1 lb. sliced thin (may use round pork butt instead)
- Round Pork Butt - 1 lb. sliced thin (may use pork shoulder instead)
- Black Pepper - 1/4 tsp.
- Flour - 1 cup
- Olive Oil
- Gralic - 1 clove, sliced
- Lemon Juice - 1/2 lemon
- White Wine - 1/2 cup
- Capers - 1 Tbs.
- Fresh Parsley - 3 Tbs.
Instructions
In bowl, mix flour and pepper together. Dredge each side of pork slice in flour mixture to cover. In fry pan add small amount of olive oil, saute pork slices for 30 seconds and then add garlic. Saute until pork slices are cooked. Remove from pan and set aside. In same pan add wine, lemon juice, capers and parsley. Mix and scrape bottom of pan. Add pork slices again and mix well. Saute one more minute.
