Amoigia Sauce
Ingredients
- Garlic - 1 whole head
- Whole Tomatoes - 3 Red Pack can
- Olive Oil - 1-1/2 cups
- Oregano - 1 Tbs
- Fresh Parsley - 1 cup
- Black Pepper - 1 Tbs
- Balsamic Vinegar - 1/4 cup
- Red Wine Vinegar - 1/4 cup
- Red Wine Vinegar - 1 Tbs
- Salt - to taste
Instructions
Salt enough to coat each garlic close; with a mortar and pestle press garlic; then add and press oregano, parsley and tomatoes. Mix 1/4 cup balsamic vinegar and 1/4 cup plus 1 tablespoon of red wine vinegar in a cup, the pour into mortar and pestle and stir together all the ingredients. Let stand at room temperature to ferment for at least ten minutes before serving.
Goes great with steak or Italian bread
