Sausage and Yellow Rice
Ingredients
- Sausage - 1-1/4 lb.
- Olive Oil - 1/3 cup
- Medium Onion - 1, diced
- Medium Green Pepper - 1, diced
- Garlic - 4 cloves, diced
- Medium Tomato - 1, diced
- Chicken Broth - 4 cups
- Bay Leaf - 1
- Oregano - 1/2 tsp.
- Saffron - large pinch
- Bijol - 1/2 tsp.
- Rice - 2 cups, uncooked
Instructions
Push sausage meat out of skin. Saute in 1/3 cup of olive oil. Brown until all sides are coated. Add diced onion, pepper, garlic and tomato to browned sausage meat and saute until transparent and peppers are soft. Then add four cups chicken broth to sausage mixture and the following seasonings; bay leaf, oregano, saffron and bijol. Add salt and pepper to taste. Bring to slow boil and simmer covered 10 minutes on low heat. After ten minutes raise heat to boil and add 2 cups rice, and stir rice in mixture for a minute or two. Lower heat to ow simmer and cover. Cook for 20-25 minutes.
