Manicotti
Ingredients
- Eggs - 8
- Flour - 2 cups
- Water - 2 cups
- Ricotta - 3 lbs.
- Mozarella - 1 large shredded
- Eggs - 6, beaten
- Parmesan Cheese - grated to taste
- Dried Parsley - 1 tsp.
- Salt - to taste
- Black Pepper - to taste
Instructions
Mix together 8 eggs, and 2 cups water. Gradually add 2 cups flour. Pour small amount of batter into small fry pan. Cook on low, cook one side until takes form, do not brown, flip over, cook other side just one second and remove from pan. Should resemble a light crepe.
Filling: In large bowl mix ricotta, half the shredded mozzarella, 6 beaten eggs, grated Parmesan cheese, parsley, salt and pepper to taste. Mix until well blended. Spread a large heaping tablespoon of ricotta mix into center of crepe. Fold ends up together to meet in center. Cover bottom of a baking pan with your own homemade tomato sauce. Place crepe, folded side down into baking pan. Drizzle more tomato sauce over manicotti shell in baking pan. then sprinkle remaining shredded mozzarella over top. Bake at 350°, 15 minutes covered pan, then uncover and bake another 15 minutes or until hot.
