Lo Mein
Ingredients
- Peanut Oil
- Yellow Zucchini - 1 diced
- Green Zucchini - 1 diced
- Carrots - 2 sliced
- Scallions - 1 bunch chopped
- Red Pepper - 1 diced
- Yellow Pepper - 1 diced
- Spaghetti - 1 lb. cooked
- Joyce Chen's Schezuan Sauce - 1/2 cup
Instructions
In large fry pan saute diced zucchini, sliced carrots, chopped scallions and diced peppers until semi soft. Cook spaghetti according to package directions for al dente. Drain. Add to saute vegetables and toss. Add Schezuan sauce to mixture and saute five minutes longer until well mixed. Serve.
