Bow Tie Pasta
Ingredients
- Bow Tie Pasta - 1 lb.
- Extra Virgin Olive Oil - 1/2 cup
- Garlic - 2 cloves sliced
- Sundried Tomatoes - 3 oz.
- Black Pitted Olives - 3 oz.
- Broccoli - 1 bunch cut up
- Red Pepper - dash
- Parmesan Cheese - 5 oz. grated
- Chicken Broth - 1 cup
Instructions
Blanch sun-dried tomatoes in hot water for 2-3 minutes. Drain and cut into strops. Saute garlic in oil for a minute, then add red pepper flakes, if desired, and saute another minute. Add sun-dried tomatoes and saute a few seconds, then add broccoli with chicken broth. Cover and cook over medium-low heat until broccoli is cooked. Add black olives last minute. Cook bow tie pasta according to package directions. Drain. Mix into broccoli mixture and stir. Just before serving sprinkle on Parmesan cheese and toss lightly. Serve immediately.
