Sliced Baked Potato
Ingredients
- Medium Potatoes - 4
- Salt - 1 tsp.
- Butter - 2-3 Tbs. melted
- Parsley - 2-3 Tbs.
- Chives - 2-3 Tbs.
- Cheddar Cheese - 4 Tbs. shredded
- Parmesan Cheese - 1-1/2 Tbs.
Instructions
Peel potatoes if the skin is tough, otherwise just scrub and rinse them. Cut potatoes into thin slices but not all the way through. Use a handle of a spoon to prevent knife from cutting all the way through. Put potatoes in a baking dish. Fan them slightly. Sprinkle with salt and drizzle with butter. Sprinkle with parsley and chives. Bake potatoes at 425° for about 50 minutes. Remove from oven. Sprinkle with cheeses. Bake potatoes for another 10-15 minutes until lightly brown, cheeses are melted and potatoes are soft inside. Check with fork.
