Krispy Whipped Sweet Potatoes
Ingredients
- Sweet Potatoes - 2, 23 oz. cans drained
- Butter - 6 Tbs. softened, ivided
- Salt - 1/2 tsp.
- Cinnamon - 1 tsp.
- Nutmeg - 1/16 tsp.
- Mini Marshmallows - 2 cups divided
- Brown Sugar - 3 Tbs. firmly packed
- Rice Krispies Cereal - 2 cups
- Vegetable Cooking Spray
Instructions
Combine sweet potatoes, 4 tablespoons of the butter, salt, cinnamon and nutmeg. Beat until smooth with electric mixer. Stir in 1 cup of mini marshmallows. Spread potato mixture in 10 x 6 x 2 inch glass baking dish or 1-1/2 quart glass baking dish that is coated with vegetable spray. Top with remaining mini marshmallows. Melt remaining butter. Combine with Rice Krispies cereal and sugar. Sprinkle over marshmallows. Bake at 350° about 20 minutes or until hot and cereal is golden brown. Serve hot.
