Black Beans
Ingredients
- Black Beans - 1 lb.
- Water - 2 qt.
- Large Green Pepper
- Olive Oil - 1/2 cup
- Large Onion - 1
- Garlic - 2 cloves
- Salt - to taste
- Black Pepper - 1/2 tsp.
- Bay Leaf - 1
- Parsley - 1 sprig
- Ground Cumin - pinch
- Oregano - pinch
- Sugar - 1/2 tsp.
- White Vinegar - 1 Tbs.
Instructions
Wash beans well in running water; cook with 1/2 the green pepper and 2 quarts of water over medium heat. When beans are soft, remove from heat. In a saucepan heat olive oil; add chopped onion, remaining green pepper cut in strips and the garlic. Cook over low heat until peppers are soft and the garlic is not browned, about 8 minutes. then add to beans and simmer while you add salt, black pepper, spices and sugar. If beans are too dry add one cup of hot water to the mixture. Cook until blended and somewhat thick.
