Turkey Salad
Ingredients
- Turkey - 3 cups cooked and cubed
- Apples - 3/4 cut into small chunks
- Celery - 1/2 cup chopped
- Mayonnaise - 1/2 dup
- Onion - 2 tsp. grated
- Oil - 3 Tbs.
- Lemon Juice - 1 tsp. (or White Vinegar)
- White Vinegar - 1 tsp. (or lemon juice)
- Salt - 1/2 tsp.
- Black Pepper - to taste
Instructions
Put small apple chunks in 1 cup of water with 2 teaspoons of lemon juice for 10 minutes to keep apples from discoloring. In separate bowl combine mayonnaise, onion, celery, oil, lemon juice, salt and pepper. Using leftover cooked turkey that is cut in chunks, add to mayonnaise mixture. Mix until blended together. Drain apples and then add apples to turkey mixture. Refrigerate about one hour. ou may substitute leftover chicken in place of the turkey.
