Red Potato Salad
Ingredients
- Red Potatoes - 7 lbs. boiled with skin on
- Large Onion - 2-1/2 finely chopped
- Mayonnaise - 32 oz.
- Salt - 1 Tbs. heaping
- White Vinegar - 1/2-3/4 cup
- Sugar - 3 Tbs.
- White Pepper - 1 tsp.
- Fresh Parsley - 1/2 cup chopped
- Olive Oil - 1/4 cup
- Vegetable Oil - 1/4 cup
- Milk - 1/2 cup
Instructions
Boil potatoes with skins on. After reaching room temperature quarter the potatoes. Then mix with onion, mayonnaise, salt, white vinegar, sugar, white pepper, parsley, oil combination and milk. This salad must be marinated overnight. Until it's marinated it may taste salty and vinegar strong, but will marinate and blend overnight. Serves many.
