Cranberry Cheese Ribbon Salad
Ingredients
- Unflavored Gelatin - 1 envelope
- Cold Water - 1 cup
- Strawberry Gelatin - 3 oz package
- Boiling Water - 3/4 cup
- Cranberry Orange Relish - 14 oz.
- Reconstituted Lemon Juice - 1/4 cup
- Cream Cheese - 8 oz softened
- Cool Whip - 4-1/2 oz thawed
Instructions
In small sauce pan, sprinkle gelatin over cold water to soften; heat and stir until gelatin dissolves. Remove from heat; set aside. Dissolve strawberry flavored gelatin in boiling water; stir in cranberry orange relish, and 2 tablespoons of lemon juice. Pour into lightly oiled 1-1/2 quart mold. Chill until slightly thickened. In large mixer bowl, beat cream cheese with remaining lemon juice until fluffy; blend in Cool Whip. Add unflavored gelatin to mixture and mix well. Spoon evenly over slightly thickened cranberry mixture. Chill about three hours or until set. Unmold and sere.
