Green Split Pea Soup
Ingredients
- Green Split Peas - 16 oz package
- Water - 3 quarts
- Ham Shank - 1 small
- Large Onion - 1 finely chopped
- Chicken Bouillon - 2 cubes
- Garlic Powder - 1/2 tsp
- Fresh Oregano - 1/2 tsp
- Black Pepper - 1/2 tsp
- Bay Leaf - 1
- Carrots - 1-1/2 cups thinly sliced
- Celery - 1 cup chopped
Instructions
In large deep pot, combine peas, water, ham shank, onion, chicken bouillon and seasonings. Simmer, uncovered, 1-1/2 hours. Remove ham shank; trim meat off bone and return pulled meat to pot. Stir in carrots and celery. Simmer, uncovered, an additional 2 to 2.5 hours or until soup reaches desired thickness. Makes six 1-1/2 cup servings.
