Broccoli Soup
Ingredients
- Butter - 1 stick
- Fresh Broccoli - 1 large bunch chopped
- Large Onion - 1 chopped
- Carrots - 1/4 cup
- Chicken Bouillon - 6 cups
- Milk - 6 Tbs
- Parmesan Cheese - 1/4 cup grated
- Paprika - to taste
- Cornstarch - 2 Tbs (optional)
- Water - 2 Tbs (optional)
Instructions
Saute broccoli, carrots and onions in butter. Broccoli will be bright green. Add 6 cups of chicken bouillon. I use the cubes. Cover and simmer 20 minutes. Uncover and add 6 tablespoons of milk. 1/4 cup Parmesan cheese and paprika. Stir and cook to thicken slightly. You may mix 2 tablespoons of cornstarch and 2 tablespoons of water in a shaker jar and add to soup to thicken even more. Serves 4-6
