Spinach Pie
Ingredients
- Pie Shells - 2 (9
- Butter - 2 Tsp
- Onion - 2 cups minced
- Frozen Chopped Spinach - 2, 10 oz packages thawed
- Ricotta - 30 oz
- Eggs - 4
- Salt - 1-1/2 tsp
- Black Pepper - 1/4 tsp
- Nutmeg - 1/8 tsp
- Parmesan Cheese - 1/2 cup
Instructions
Heat oven to 400°. Prick pie shells all over with fork. Bake, 15 minutes until lightly browned. In large skillet melt butter and onion. Cook until soft. Squeeze spinach and remove as much moisture as possible. Add spinach to onion and toss over heat until liquid is all gone, remove from heat, in separate bowl mix remaining ingredients. Add spinach and onion mixture to bowl and mix until it looks like green and white marble. Pour half the filling into one pie shell. Pour other half of filling into second pie shell. Turn oven down to 350° and bake pies 40 to 45 minutes until tops are golden.
