Shrimp Bruno
Ingredients
- Jumbo Shrimp - 3 raw, peeled and deveined
- Flour - to dust
- Egg Wash - 1 oz. Milk and 1 egg yolk, to coat
- Salad Oil - 2 oz.
- Garlic - 1 tsp. chopped
- Lemon - 1/2
- White Wine - 2 oz.
- Grey Poupon Mustard - 1 tsp.
- Chicken Broth - 3 oz.
- Butter - 1 tsp.
- Salt - pinch
Instructions
Flour shrimp, dip in egg wash. Heat salad oil in pan, place shrimp in hot oil. Saute until lightly golden brown, add chopped garlic and continue to saute one more minute. Drain excess oil and garlic. Add lemon, white wine, let reduce by half. Add mustard and chicken broth, let reduce by half. Add butter and salt to finish sauce. Line shrimp on plate. Strain sauce on top of shrimp. Serve immediately.
