Salami Pie - Pizza Rustica
Ingredients
- Flour - 2 cups
- Baking Powder - 3 tsp.
- Salt - 1/2 tsp.
- Sugar - 2 Tbs.
- Crisco Shortening - 1/3 cup
- Milk - 1/2 cup
- Egg - 1 beaten
- Ricotta - 3 lb.
- Genoa Salami - 1/2 lb. sliced thin diced
- Prosciutto - 1/2 lb. sliced thin diced
- Provolone Cheese - 1/2 lb. sliced thin diced
- Egg - 2 hard boiled chopped
- Parsley - to taste
- Salt - to taste
- Black Pepper - to taste
- Parmesan Cheese - grated to taste
- Eggs - 6 beaten
Instructions
To make crust mix together 2 cups flour, 3 teaspoons baking powder, 1/2 teaspoon of salt, 2 tablespoons sugar, 1/3 cup Crisco shortening. Mix 1/2 cup milk and 1 beaten egg and add to flour mixture. Mix well. Half dough. Roll out dough to fit medium size rectangular baking pan. Place dough on bottom and sides of pan. in large bowl mix ricotta with parsley, salt, pepper, grated Parmesan cheese, to taste and beaten eggs. Stir well. Fold in diced salami, prosciutto, provolone, ham and chopped hard-boiled eggs. Pour ricotta mixture into crust. Roll out second dough, place on top of baking dish to cover mixture. Crimp top crust to bottom crust. Brush top crust with 1 beaten egg white. Bake at 350° until crust is golden brown, approximately 1 hour. Check bottom crust, be sure browned.
