Mexican Dip
Ingredients
- Refried Beans - 1 can
- Sour Cream - 16 oz.
- Taco Seasoning - 1 pkg.
- Avocado - 1
- Cheddar Cheese - 12 oz. shredded (option: mix with Monterey Jack)
- Scallions - 2 bunches
- Black Olives - 2.25 oz. sliced
- Italian Plum Tomatoes - 3
Instructions
Mix sour cream and taco seasonings together. In separate bowl mash avocado. Dice and deseed tomatoes, place tomatoes in colander and drain, pat tomatoes with paper towel. Chop scallions using only white part of scallion. In deep pie dish layer ingredients in the following order; refried beans, sour cream and taco seasoning mix, mashed avocado, shredded cheeses, scallions, sliced olives, and lastly tomatoes. Serve with Tostitos Chips.
