Manhattan Meatballs
Ingredients
- Ground Beef - 2 lbs.
- Bread Crumbs - 2 cups
- Onion - 1/2 cup chopped
- Eggs - 2
- Fresh Parsley - 2 Tbsp chopped
- Margarine - 2 Tbsp
- Apricot Preserves - 10 oz.
- Barbecue Sauce - 1/2 cup
- Salt - 2 tsp
Instructions
Combine meat, bread crumbs, oinon, eggs, parsley and salt; mix lightly. Shape into 1" meatballs. Brown in margarine; drain. Place in 2 quart casserole. Combine preserves and barbecue sauce; pour over meatballs. Bake at 350°, 30 minutes, stirring occasionally. To make ahead: Prepare recipe as directed, except for baking. Cover; seal securely. Freeze. When ready to serve, place in refrigerator 6-8 hours. Uncover; bake at 350°, one hour, stirring occasionally.
