Shrimp Scampi Romagna
Ingredients
- Jumbo Shrimp - 1 lb.
- Spinach Noodles - 8 oz.
- Medium Egg Noodles - 8 oz.
- Mushrooms - 1-1/2 c, sliced
- Olive Oil - 1/2 c
- Butter - 1/4 c
- Garlic - 2 cloves, finely chopped
- Lemon Juice - 2 Tbs
- Salt - 1 tsp.
- Pepper - 1/2 tsp.
- Fresh Parsley - 1/2 c, chopped
Instructions
Peel and devein shrimp, cut all but 12 shrimp, to be used as garnish if you want, in half lengthwise. Place all shrimp; both cut and whole shrimp in saucepan. Set aside. Cook both packages of noodles together for 12 minutes, rinse and drain well. Meanwhile, add mushrooms to reserved shrimp, along with better, garlic, lemon juice, salt, pepper and 1/4 c chopped parsley. Bring shrimp mixture to a boil. Remove from heat. Cover and let stand five minutes. Remove whole shrimp from sauce with slotted spoon. Set aside whole shrimp. Mound drained noodles into serving bowl. POur shrimp and sauce over noodles. Toss well to mix. Garnish with reserved whole shrimp. Sprinkle with remaining parsley.
