Shrimp Ginger Grilled Pineapple
Ingredients
- Olive Oil - 1 tsp.
- Large Shrimp - 12
- Fine Sea Salt - to taste
- Black Pepper - to taste
- Garlic - 1/2 tsp. minced
- Fresh Orange Juice - 1/2 c
- Fresh Lime Juice - 1/4 c
- Scallion - 2 Tbs, minced
- Cilantro - 2 Tbs, minced
- Fresh Ginger - 1 Tbs + 1 tsp.
- Sesame Oil - 1 Tbs
- Pineapple - 1 Large, peeled, cored and quartered lengthwise
- Sesame Seeds - 1 tsp.
Instructions
Heat the oil in skillet. Season shrimp with sea salt and pepper. Cook shrimp over high heat for one minute. Add onion and garlic, cook, stirring occasionally until the shrimp are cooked through; about two minutes more. Stir in orange juice, 2 tablespoons lime juice, the scallion and cilantro; Transfer to a bowl and cool. Meanwhile in another bowl, combine the remaining 2 tablespoons lime juice with the ginger, sesame oil, 1/2 tsp. salt and 1/4 tsp. pepper. Brush pineapple with thei mixture and let stand at room temperature for 30 minutes. In a dry skillet, toast sesame seeds over high heat, shaking the pan until fragrant, about 2 minutes. Light a grill or preheat broiler. Grill pineapple for about 2 minutes per side, turning once, until it is lightly browned. Cut each quarter crosswise into six pieces and arrange the pieces on six plates. Set 2 shrimp on each plate. Spoon on little orange juice marinade. Sprinkle with sesame seeds.
