Seafood Brochettes
Ingredients
- Shrimp - 6 (tails on, uncooked)
- Sea Scallops - 3/4 lb.
- Cherry Tomatoes - 12
- Large Green Pepper - 1, blanched in boiling water for 3 minutes
- Pineapple - 1/2 lb.
- Dry Sherry - 1/2 c
- Sesame Seeds - 2 Tbs crushed
- Garlic - 1 clove, finely chopped
- Salt - 1/4 tsp.
- Pepper - 1/4 tsp.
- Fresh Ginger - 2 Tbs grated
Instructions
In medium size bowl, combine dry sherry, sesame seeds, garlic, salt, pepper and grated ginger. Mix well. Place shrimp and scallops. Let stand at room temperature for 30 minutes. Drain, reserving marinade. Blanch green pepper in boiling water for 3 minutes, cut up in pieces for skewer. Thread the shellfish on six skewers, alternating with pineapple tomato and pepper. Broil 4-6" from heat or grill until shrimp are pink and scallops are cooked; about 8 to 10 minutes. Turn several times and brush often with marinade.
