Pumpkin Bread
Ingredients
- Pumpkin - 2 c
- Crisco Shortening - 1 c
- Sugar - 2-3/4 c
- Eggs - 3
- Flour - 3-1/2 c
- Baking Powder - 1/2 tsp.
- Salt - 1 tsp.
- Nutmeg - 3/4 tsp.
- Ground Cloves - 3/4 tsp.
- Cinnamon - 1 tsp.
- Walnuts - 3/4 c, chopped
Instructions
Cut, peel, boil and mash fresh pumpkin after discarding pulp and seeds, or bake cut pumpkin in a 350° oven for 1 hour, then mash. Cream 1 cup shortening, and 2-3/4 cup sugar. Add 3 eggs and 2 cups fresh pumpkin, mix well. In a separate bowl mix together 3-1/2 cups flour, 1/2 teaspoon baking powder, salt, nutmeg, ground cloves and cinnamon. Add together with pumpkin mixture. Mix. Fold into mixture 3/4 cup chopped walnuts. Bake at 350° for one hour in 2 greased and floured loaf pans.
