Chicken with Snow Peas in Hoisin
Ingredients
- Boneless Chicken Breast - 2 lbs. cut up
- Garlic - 1 Tbs. minced
- Ginger - 2 tsp. minced
- Snow Peas - 1/2 lb.
- Cashews - 1/4 c (optional)
- Hoisin Sauce - 3 Tbs
- Salt - 1 tsp.
- Sugar - 1 Tbs
- Soy Sauce - 2 Tbs
- Sherry - 1 Tbs
- Oyster Sauce - 1 Tbs
- Cornstarch - 1 tsp.
- Water - 2 Tbs
- Sesame Oil
- Peanut Oil
Instructions
Stir fry chicken in 2 tablespoons peanut oil. Add garlic and ginger, stir fry until slightly brown. Stir in sauce mixture. Add snow peas and nuts. Stir one minute. Add couple of drops of sesame oil around edge of pan. Cook covered 30 seconds. Stir and serve over rice.
Sauce:
In shaker container add 3 tablespoons hoisin sauce, 1 teaspoon salt, 1 tablespoon sugar, 2 table spoons soy sauce, 1 tablespoon sherry, 1 tablespoon oyster sauce, 1 teaspoon cornstarch, 2 tablespoons water. Shake well until blended.
