Lemon Blueberry Cake
Ingredients
- Yellow Cake Mix - 1 box
- Lemon Zest - 1 Tbs.
- Fresh Blueberries - 2 cups
- Water - 1-1/2 cups
- Lemon Flavored Gelatin - 6 oz. pkg.
- Confectionery Sugar
- Cool Whip - 8 oz. container, thawed
Instructions
Preheat oven to 375°. Grease a 9 x 13 baking pan. Prepare cake mix according to package directions. Zest lemon to yield one tablespoon. Stir into cake batter. Pour batter evenly into greased baking pan. Sprinke with blueberries. in a one quart microwave bowl, microwave water on high about 3 minutes or unitl boiling. Whisk in gelatin until dissolved. Pour gelatin mixture evenly over top of batter. Bake 30-35 minutes or until cake tested in center comes our clean. Cool slightly; sprinkle with confectionery sugar. Spoon warm cake pieces into dessert bowls and garnish with whipped topping. Makes approximately 16 servings.
