Bruschetta Pizza
Ingredients
- Tomatoes - 8
- Fresh Basil - 3/4 cup chopped
- Fresh Parsley - 1/8 cup chopped
- Medium Onion - 1 diced
- Salt - dash to taste
- Black Pepper - dash to taste
- Extra Virgin Olive Oil - 1/4 cup
- Pizza Dough - 1
- Parmesan Cheese - 1/8 cup grated
Instructions
De-seed and dice tomatoes. Drain tomatoes in colander. In bowl combine tomatoes, onions, olive oil, basil parsley, salt and pepper. Stretch out pizza dough onto a cookie sheet, brush on small amount of olive oil. Flip dough off cookie sheet onto a hot oil sprayed grill. Grill 4-1/2 minutes on one side, with grill cover down. Flip dough and brush oil on top side of dough, let bake on low for another 4 minutes, replace onto cookie sheet and add tomato mixture to the top of dough, sprinkle with Parmesan cheese. Grill for another few minutes. Grill with cover down. Cut into pieces and serve immediately.
