Turmeric Rice
Ingredients
- Rice - 2 cups, uncooked
- Water - 4 cups
- Turmeric - 2 tsp.
- Sliced Mushrooms - 1 package
- Shallots - 3 chopped
- Allspice - 1/2 tsp.
- Frozen Peas - 10 oz. box
- Butter - 1/2 stick
- Salt - to taste
- Black Pepper - to taste
Instructions
In a large pot add rice, water, dash of salt and turmeric. Stir together, Bring to a boil. When a boil is reached, cover and cook on low heat until rice has absorbed all the liquid, approximately 25 minutes. In separate fry pan melt butter; saute mushrooms and chopped shallots for five minutes, sprinkle with allspice, salt and black pepper. Stir and add peas, cook until peas are done. Place rice in serving dish, place mushroom mixture on top, covering the center of rice.
