Steak and Potato Salad
Ingredients
- Red Wine Vinegar - 2 Tbs.
- Extra Virgin Olive Oil - 1 Tbs.
- Fresh Ground Black Pepper - 1/2 tsp.
- Salt - 1/2 tsp.
- Tomatoes - 2, diced
- Arugula - 4 cups torn and cleaned (may substitute with spinach)
- Spinach Leaves - 4 cups (may substitute with arugula)
- New Potatoes - 1 lb. cooked and halved
- Flank Steak - 2 cups (lean), thinly sliced
- Sliced Mushrooms - 2 cups
Instructions
In a large bowl, whisk the vinegar, oil, pepper and salt. Add the tomatoes; toss to combine. Let stand 20 minutes. Add the arugula, potatoes, steak and mushrooms to the tomatoes; toss to combine. Serve at once.
