Sicilian Meat Roll
Ingredients
- Eggs - 2 beaten
- Bread Crumbs - 3/4 cups
- Tomato Juice - 1/2 cup
- Parsley - 2 Tbs.
- Oregano - 1/2 Tbs.
- Salt - 1/4 Tbs.
- Black Pepper - 1/4 tsp.
- Garlic - 1 clove, minced
- Ground Beef - 2 lbs.
- Boar's Head Ham - 8 thin slices
- Mozzarella Cheese - 6 oz., shredded
- Mozzarella Cheese - 3 slices
Instructions
In a large bowl, combine eggs, bread crumbs, tomato juice, parsley, oregano, salt, pepper and garlic. Knead in ground beef until well blended. On foil or wax paper, pat meat mixture into a 12 x 10 rectangle pan. Arrange slices of ham on top of meat leaving a small margin around edge. Sprinkle shredded mozzarella over ham. Starting at short end, carefully roll up meat using foil to lift. Seal all edges. Place meat roll, seam side down, in a pan. Cook at 350° for 1 hour. Remove from oven and place the 3 slices of mozzarella over the top of meat roll and return to oven 5 more minutes or until cheese melts.
