Fruit Cake
Ingredients
- Butter - 2 sticks, melted
- Sugar - 2 cups
- Walnuts - 1 cup, chopped
- Mixed Fruit - 1 jar
- Raisins - 1/2 lb.
- Salt - 1 tsp.
- Cinamon - 1 tsp.
- Allspice - 1 tsp.
- Cloves - 1 tsp.
- Perked Coffee - 2 cups
- Baking Soda - 2 tsp.
- Warm Water - 1/8 cup
- Flour - 3 cups
Instructions
Melt two sticks of butter in a saucepan. Add sugar, nuts, mixed fruit, raisins, salt, cinnamon, allspice, cloves, and perked coffee. Put on high heat and bring to a boil. In a separate small bowl add baking soda to warm water, dissolving baking soda, then add this to boiling mixture. It will bubble. When this happens, take of heat and cover. Let stand until cold. it takes overnight or all day to get completely cool. Sift flour and add to cold mixture. Grease pan with crisco shortening. Bake at 350° for approximately 1 to 1-1/4 hours.
