Easter Basket Cake
Ingredients
- Funfetti Cake Mix - 1 box (may use Yellow Cake Mix instead)
- Vanilla Cake Mix - 1 box (may use Funfetti Cake Mix instead)
- Cool Whip Topping - 8 oz. container, thawed
- Bakers Angel Flake Coconut - 4 cups
- Red Rope Licorice - 1-3 feet
- Red Shoestring LIcorice - 1-3 feet
- Jelly Veans
- Coconut Chocolate Eggs - 4-5
- Green and Yellow Food Coloring
- Funfetti Frosting - 1 container (may use Vanilla Frosting instead)
- Vanilla Frosting - 1 container (may use Funfetti Frosting instead)
Instructions
Bake cake in two round cake pans, according to package directions. Cool completely. Frost the top of one cake with funfetti or vanilla frosting. Place second round cake on top and frost entire outside of cake with cool whip topping. Tint half the cocount with green food colring and half with yellow food coloring. Press yellow coconut on side of cake to resemble basket; leave small squares of cool whip without coconut if you want a basket weave effect. Sprinkle green coconut over top of cake to resemble grass for basket. Fold rope licorice in half and twist, wrap with shoestring licorice. Insert ends into top of cake to form a basket handle. Garnish with jelly beans. Store in refrigerator. Use mounds chocolate coconut eggs on top of cake before serving.
