Chicken Cacciatore
Ingredients
- Chicken - 2-1/2 to 3 lbs. cut up
- Olive Oil - 3 Tbs.
- Tomato Sauce - 15 oz. can
- Tomato Paste - 6 oz. can
- Medium Onion - 1, chopped
- Salt - 1 tsp.
- Oregano - 1/2 tsp. (may substitute with Italian Seasoning)
- Italian Seasoning - 1/2 tsp. (may substitute for Oregano)
- Garlic - 2 cloves, minced
- Black Pepper - 1/8 tsp.
- Dry Red Wine - 1/4 cup
- Sliced Mushrooms - 10 oz. package (optional)
- Spaghetti
Instructions
In large fry pan or Dutch oven, brown chicken in hot oil. Stir in tomato sauce, tomato paste, chopped onion, salt, Italian seasoning, minced garlic, pepper, dry red wine, and mushrooms. Reduce heat; cover. Simmer covered 45-50 minutes or until tender. Serve over spaghetti.
