Chicken and Mushrooms
Ingredients
- Chicken Cutlets - 6
- Sliced Mushrooms - 10 oz.
- Chicken Broth - 14 oz.
- White Wine - 7 oz.
- Butter - 2 Tbs.
- Olive Oil - 2 Tbs.
Instructions
Melt butter in fry pan, add oil and mix together. Saute mushrooms in butter/oil mixture. Then add chicken broth and white wine. Simmer about 5-10 minutes. Bread chicken cutlet first in egg wash then in bread crumbs. Fry until just browned on each side, not completely cooked. Drain on paper towel. Place cutlets in glass baking pan. Pour mushroom mixture onto cutlets. Bake at 350° for 45 minutes
