Carrot Cake
Ingredients
- Flour - 2-1/4 cups
- Sugar - 2 cups
- Cinnamon - 2 tsp.
- Nutmeg - 1/2 tsp.
- Baking Soda - 1-1/2 tsp.
- Salt - 1/2 tsp.
- Baking Powder - 1 tsp.
- Wesson Oil - 1-1/2 cups
- Carrots - 2 cups, finely grated
- Walnuts - 1 cup, chopped
- Egg Yolks - 4
- Hot Water - 6 Tbs.
- Egg Whites - 4, beaten stiff
Instructions
In a large bowl, add the following ingredients in the following order, blending well after each addition: First flour, then sugar, cinnamon, nutmeg, baking soda, salt, baking powder, Wesson oil, carrots, walnuts, egg yolks, and hot water. Blending well. Lastly fold in beaten stiff egg whites. Bake in ungreased tube pan for one hour and 15 minutes in 300° oven.
