Sweet Potato Pie
Ingredients
- Sweet Potatoes - 5-7
- Butter - 1-2 sticks, to taste
- Salt - to taste
- Black Pepper - to taste
- Mini Marshmallows - 1 bag
Instructions
Peel, cut up and boil sweet potatoes. Drain. Mash. Add butter, salt and pepper to potatoes and mash until blended. Place half the potatoes in baking dish; then add half the mini marshmallows. Add balance of potatoes and top with remaining marshmallows. Bake at 350° until marshmallows soften and are golden brown. Optional you can add 1 can crushed pineapples to the center layer.
