Shrimp Toast
Ingredients
- Raw Shrimp - 1 lb
- Canned Sliced Water Chestnuts - 1-5oz can drained
- Onion - 2 Tbs minced
- Chives - handful
- Salt - 2 tsp
- Sugar - 1 tsp
- Egg - 1 beatened
- Pepperidge farm White Bread - 15 slices
- Seasoned Bread Crumbs
Instructions
Place in food processor, raw shrimp, sliced water chestnuts, minced onion and chives. Grind together to a paste. Then add in food processor 2 tsp. salt; 1 tsp sugar, 1 beaten egg. Blend again. Spread mixture on 15 slices of thin sliced white bread. Sprinkle top lightly with fine seasoned bread crumbs. Pat down crumbs with fork. Cut each slice into four triangles. Heat oil in a frying pan so that oil is 1" deep and very hot. Fry each triangle shrimp side down first, then brown on other side about 2 minutes each side. Drain on absorbent paper. Freeze in zip lock plastic bag after freezing on cookie sheet first. When ready to serve, defrost and reheat in 400° oven for 5 minutes. Makes 60. Serve with duck sauce.
