Portabella Mushroom Appetizer
Ingredients
- Portabella Mushrooms - 6 oz.
- Salt
- White Pepper
- Extra Virgin Olive Oil - 3 oz.
- Lime - 2 limes
- Garlic - 1 clove
- Shallot - 1 small
- Fresh Parsley - 1 tsp.
Instructions
Season the mushrooms with salt, white pepper and extra virgin olive oil to taste and grill over high heat for 4 minutes until soft. Let cool.
Marinade: In shaker container add 3 ounces extra virgin olive oil, juice of 2 limes, 1 clove minced garlic, 1 small chopped shallot, 1 teaspoon fresh chopped parsley. Shake well. Pour over grilled cooled mushrooms and marinate one hour. Chill before serving. Makes 4 servings.
