Eggplant Componata
Ingredients
- Eggplant - 2, cut in pieces
- Vinegar - 1/4 cup
- Capers - 1 jar
- Onion - 1, chopped
- Celery - 1 stalk, boiled and chopped
- Sugar - to taste
- Salt - to taste
- Black Pepper - to taste
- Green Olives - 1 can crushed
- Tomato Paste - 1 can
Instructions
Fry eggplant, onions, celery, capers, olives and then add seasonings to taste; cook slowly until tender. Place in serving bowl.
