Chicken and Shrimp Scampi
Ingredients
- Jumbo Shrimp - 1 lb. (can use large)
- Chicken Breast - 1 lb., cut in half, dollar size
- Sundried Tomatoes - 10
- Garlic - 4 cloves chopped fine
- Butter - 1/3 stick
- Olive Oil - 4 Tbs.
- Fresh Parsley - 3 Tbs. chopped
- Flour - enough to coat chicken
- Paprika - to taste
- Salt - to taste
- Black Pepper - to taste
- Lemon Juice - 1/2 lemon
- Oregano - dash
- Bread Crumbs - 1 cup
- Parmesan Cheese - 1-1/2 Tbs. grated
- Black Pepper - 1/4 tsp.
Instructions
In a plastic bag add some flour, paprika, salt and pepper. Add chicken chunks to bag and shake to coat. Set aside. On board chop fresh parsley, place in bowl; finely chop garlic, add to oil. Cut butter into small chunks and add to oil mixture. In another plastic bag add bread crumbs, Parmesan cheese, and black pepper and shake; then add shrimp to bag and shake to coat with bread crumb mixture. Place shrimp on oil brushed baking sheet, stir and broil until just turning pink. In separate oil brushed baking sheet broil chicken chunks for 4 minutes, turning to cook both sides. In a new baking pan layer; first sun-dried tomatoes, chicken, shrimp, oil/butter/garlic mix, chopped parsley, drizzle juice of lemon, black pepper and sprinkle oregano on top. Broil on second shelf down in oven for about 15 minutes stir occasionally several times during the 15 minutes. Serve immediately.
