Caesar Salad Castello Style
Ingredients
- Romaine Lettuce - broken into small pieces
- Croutons - to taste
- Small Onion - 1 sliced very thin
- Parmesan Cheese - to taste
- Large Lemon - 1/2
- Balsamic Vinegar - 1/4 cup
- Olive Oil - 3/4 cup
- Dijon Mustard - 1 tsp
- Egg Yolks - 2
- Garlic - 5 cloves
- Anchovies - 3 strips
Instructions
Place romaine lettuce, sliced onion and croutons in large bowl. In medium bowl wire whisk juice from the 1/2 lemon, 1/4 cup balsamic vinegar, 1/2 cup olive oil, 2 egg yolks, and 1 tsp. Dijon mustard until well blended. In separate bowl mash 5 garlic cloves and 3 strips of anchovies together; then whisk together with dressing until well blended. Pour dressing over salad; add Parmesan cheese to taste and toss all together.
