Cesar Salad
Ingredients
- Romaine Lettuce - 2 medium heads
- Garlic Olive Oil - 1/3 cup
- Wine Vinegar - 2-3 Tbs
- Lemon - 1 halved
- One Minute Coddled Eggs - 1 or 2
- Salt - to taste
- Worcestershire Sauce - dash
- Parmesan Cheese - 6 Tbs grated
- Caesar Croutons - 1 cup
Instructions
Use a chilled salad bowl. Over torn romaine, zigzag a stream of olive oil (Garlic Olive Oil Recipe); repeat with vinegar. Squeeze in 1 lemon. With a flourish break 1 or 2 coddle eggs atop greens, shake in salt, Worcestershire sauce, give the pepper mill several generous twists. Sprinkle with Parmesan. Roll/toss, Add croutons (Homemade Caesar Croutons Recipe). Garnish with rolled anchovies, if desired.
