Marinated Shrimp
Ingredients
- Frozen Jumbo Cooked and Cleaned Shrimp - 2 lbs.
- Medium Red Onion - 1, sliced
- Black Pitted Olives - 1 can, sliced
- Lemon - 2, sliced (garnish)
- Olive Oil - 1/2 cup
- Red Wine Vinegar - 3 Tbsp.
- Lemon Juice - 3 Tbsp.
- Fresh Parsley - 1/3 cup, chopped
- Garlic - 1 clove, mashed
- Bay Leaf - 1
- Dry Mustard - 1 tsp.
- Sweet Basil - 1 tsp.
- Salt - 1 tsp.
- Black Pepper - 1/4 tsp.
Instructions
Defrost and drain shrimp in colander. In jar mix olive oil, red wine vinegar, fresh lemon juice, parsley, garlic, bay leaf, dry mustard, sweet basil, salt and pepper. Shake well. In large bowl place shrimp, red onions and black olives. Pour mixture over shrimp and olives and mix. Marinate and refrigerate for 24 to 48 hours. Just before serving place sliced lemons on top as garnish.
