Chicken Puffs Royale
Ingredients
- Water - 1/2 cup
- Margarine - 1/4 cup
- Flour - 1/2 cup
- Salt - dash
- Eggs - 2
- Chicken - 2 cups cooked and chopped
- Cheddar Cheese - 1 cup shredded
- Celery - 3/4 cup chopped
- Stuffed Green Olives - 1/4 cup
- Salt - 1/2 tsp.
- Black Pepper - dash
- Mayonnaise - to taste
Instructions
To make miniature cream puffs, bring 1/2 cup water and 1/4 cup margarine to boil. Add 1/2 cup flour and 1/2 teaspoon salt; stir vigorously over low heat until mixture forms a ball. Remove from heat. Add eggs, one at a time, beating well after each addition. Drop rounded teaspoons of batter onto ungreased cookie sheet. Bake 400° for 30-35 minutes or until golden brown. Remove from cookie sheet immediately; cool. Makes 3 dozen. To make the filling combine 2 cups of chopped cooked chicken, 1 cup shredded sharp cheddar cheese, 3/4 cup chopped celery, 1/4 cup chopped stuffed green olives, 1/2 teaspoon salt, dash pepper, and enough mayonnaise to just moisten the mixture. Mix lightly. Cut tops from miniature cream puffs, fill puff with chicken mixture. Replace tops. Bake 350°, 15 minutes.
